Ingredients

- 2 cups pulled pork
- 1 cup macaroni pasta
- 3 cups shredded sharp cheddar cheese
- 4 tablespoons butter
- 4 tablespoons flour
- 2 cups milk
- 1 cup cream
- 1 cup sautéed mushrooms (cremini or shiitake)
- 4 flour tortillas
- 1 teaspoon garlic powder
- Salt to taste
- Black pepper to taste
Instructions
- Prepare the cheese sauce: In a large pot over medium heat, melt about 4 tablespoons of butter. Once melted, stir in 4 tablespoons of flour, whisking constantly for a minute. Gradually add in 2 cups of milk and 1 cup of cream. Keep whisking until the mixture thickens. Stir in 3 cups of shredded cheddar cheese until melted and creamy. Season with garlic powder, salt, and pepper to taste.
- Cook the macaroni: In a separate pot, boil water and cook the macaroni according to package instructions. Once al dente, drain and mix with the cheese sauce. Stir in about 1 cup of the pulled pork and sautéed mushrooms for extra flavor.
- Assemble the wraps: Lay out your tortillas and spoon a generous amount of the mac and cheese mixture onto the center. Roll tightly, folding in the sides as you go to secure the filling.
- Sear the wraps: In a skillet over medium heat, add a little butter or oil. Place the wraps seam-side down and cook until golden brown, approximately 2-3 minutes per side.
- Serve and enjoy: Slice the wraps in half and serve with your favorite dipping sauce, like barbecue or ranch.
Notes
Grill the wraps for added smokiness and a lovely char. Avoid overcooking the macaroni to keep it firm.
