Pulled Pork Mac & Cheese Wraps

Delightful wraps combining pulled pork and creamy mac & cheese, perfect for gatherings.


Ingredients

  • 2 cups pulled pork
  • 1 cup macaroni pasta
  • 3 cups shredded sharp cheddar cheese
  • 4 tablespoons butter
  • 4 tablespoons flour
  • 2 cups milk
  • 1 cup cream
  • 1 cup sautéed mushrooms (cremini or shiitake)
  • 4 flour tortillas
  • 1 teaspoon garlic powder
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Prepare the cheese sauce: In a large pot over medium heat, melt about 4 tablespoons of butter. Once melted, stir in 4 tablespoons of flour, whisking constantly for a minute. Gradually add in 2 cups of milk and 1 cup of cream. Keep whisking until the mixture thickens. Stir in 3 cups of shredded cheddar cheese until melted and creamy. Season with garlic powder, salt, and pepper to taste.
  2. Cook the macaroni: In a separate pot, boil water and cook the macaroni according to package instructions. Once al dente, drain and mix with the cheese sauce. Stir in about 1 cup of the pulled pork and sautéed mushrooms for extra flavor.
  3. Assemble the wraps: Lay out your tortillas and spoon a generous amount of the mac and cheese mixture onto the center. Roll tightly, folding in the sides as you go to secure the filling.
  4. Sear the wraps: In a skillet over medium heat, add a little butter or oil. Place the wraps seam-side down and cook until golden brown, approximately 2-3 minutes per side.
  5. Serve and enjoy: Slice the wraps in half and serve with your favorite dipping sauce, like barbecue or ranch.

Notes

Grill the wraps for added smokiness and a lovely char. Avoid overcooking the macaroni to keep it firm.
