Description

Pav Bhaji is a flavorful and comforting Indian street food made with spiced mashed vegetables and buttered bread rolls, bringing warmth and joy to every gathering.

Ingredients

Scale
  • 3 medium Potatoes, peeled and diced
  • 1 cup Mixed Vegetables (peas, bell peppers, tomatoes)
  • 1 large Onion, chopped
  • 3 cloves Garlic, minced
  • 1 tablespoon Red Chili Powder
  • 1 teaspoon Turmeric Powder
  • 1 tablespoon Garam Masala
  • 4 tablespoons Butter
  • Fresh cilantro, for garnish
  • 4 Pav (dinner rolls)
  • Lime wedges, for serving

Instructions

  1. Prepare the vegetables: Peel and chop the potatoes into small cubes and chop the onion, tomato, and bell pepper.
  2. Heat butter in a large skillet over medium heat. Sauté the onions until golden brown.
  3. Add minced garlic, followed by red chili powder, turmeric, and garam masala. Sauté until fragrant.
  4. Mix in the chopped potatoes and other vegetables. Cook for about 10 minutes with a lid on, allowing to steam.
  5. Mash the cooked vegetables with a potato masher until creamy and well combined.
  6. If too thick, add water or vegetable broth to adjust consistency. Season with salt as needed.
  7. Finish with additional butter and top with fresh cilantro.
  8. Toast the pav in a separate skillet with butter until golden brown on both sides.
  9. Serve bhaji in bowls with toasted pav on the side. Garnish with lime juice and extra cilantro.

Notes

For a vegan version, replace butter with non-dairy butter. Feel free to customize vegetables based on availability.
