- 4 bell peppers (red, yellow, or green)
- 2 cups fresh spinach
- 1 cup crumbled feta cheese
- 1 onion (diced)
- 2 cloves garlic (minced)
- 2 tablespoons olive oil
- 1 tablespoon fresh dill or parsley
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the bell peppers by slicing the tops off and removing the seeds; place them upright in a baking dish.
- Sauté the onions in olive oil over medium heat until translucent, about 3-4 minutes. Add minced garlic and cook for an additional minute.
- Add fresh spinach and cook until wilted, about 2-3 minutes.
- Mix the sautéed vegetables with crumbled feta and herbs in a bowl; season as desired.
- Stuff each bell pepper with the filling generously.
- Bake covered with foil for 25 minutes, then remove foil and bake for an additional 10-15 minutes.
- Serve after cooling for a few minutes, garnished with chopped herbs if desired.
