  • 2 cups fresh spinach
  • 1 cup crumbled feta cheese
  • 1 onion (diced)
  • 2 cloves garlic (minced)
  • 2 tablespoons olive oil

  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the bell peppers by slicing the tops off and removing the seeds; place them upright in a baking dish.
  3. Sauté the onions in olive oil over medium heat until translucent, about 3-4 minutes. Add minced garlic and cook for an additional minute.
  4. Add fresh spinach and cook until wilted, about 2-3 minutes.
  5. Mix the sautéed vegetables with crumbled feta and herbs in a bowl; season as desired.
  6. Stuff each bell pepper with the filling generously.
  7. Bake covered with foil for 25 minutes, then remove foil and bake for an additional 10-15 minutes.
