Deliciously juicy keto-friendly meatballs infused with garlic and fresh herbs, enveloped in a rich garlic butter sauce.

- 1 lb (450g) Ground Meat (beef, pork, or turkey)
- 4 cloves Fresh Garlic, minced
- 2 tbsp Unsalted Butter
- 1/2 cup Almond Flour
- 1/4 cup Grated Parmesan Cheese
- 2 tbsp Fresh Parsley, chopped
- 1 tbsp Fresh Thyme, chopped
- Salt, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the garlic butter by melting two tablespoons of butter in a small pan and adding minced garlic; sauté until fragrant.
- Mix ground meat, almond flour, sautéed garlic and butter, chopped herbs, and salt in a large bowl; don’t overmix.
- Shape into bite-sized meatballs, about one inch in diameter, and place on a baking sheet lined with parchment paper.
- Bake for about 20 minutes or until golden and cooked through; baste with melted garlic butter halfway through if desired.
- Toss baked meatballs in a sauce made from melted butter, garlic, and herbs before serving.
- Serve garnished with fresh parsley and grated Parmesan.
Notes
Keep an eye on the meatballs during baking to prevent them from overcooking. Let them rest after baking for juicier meatballs.
