Description

Deliciously juicy keto-friendly meatballs infused with garlic and fresh herbs, enveloped in a rich garlic butter sauce.


Ingredients

  • 1 lb (450g) Ground Meat (beef, pork, or turkey)
  • 4 cloves Fresh Garlic, minced
  • 2 tbsp Unsalted Butter
  • 1/2 cup Almond Flour
  • 1/4 cup Grated Parmesan Cheese
  • 2 tbsp Fresh Parsley, chopped
  • 1 tbsp Fresh Thyme, chopped
  • Salt, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the garlic butter by melting two tablespoons of butter in a small pan and adding minced garlic; sauté until fragrant.
  3. Mix ground meat, almond flour, sautéed garlic and butter, chopped herbs, and salt in a large bowl; don’t overmix.
  4. Shape into bite-sized meatballs, about one inch in diameter, and place on a baking sheet lined with parchment paper.
  5. Bake for about 20 minutes or until golden and cooked through; baste with melted garlic butter halfway through if desired.
  6. Toss baked meatballs in a sauce made from melted butter, garlic, and herbs before serving.
  7. Serve garnished with fresh parsley and grated Parmesan.

Notes

Keep an eye on the meatballs during baking to prevent them from overcooking. Let them rest after baking for juicier meatballs.
