A delicious keto-friendly casserole featuring tender chicken, fresh spinach, and a creamy cheese mixture, perfect for family dinners.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 8 oz cream cheese
  • 2 cups fresh spinach
  • 1 cup shredded cheese (cheddar and mozzarella)
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 1/2 cup heavy cream
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the chicken: In a skillet over medium heat, season your chicken breasts with salt and pepper. Sear them until golden brown on both sides, about 5-7 minutes per side.
  3. Remove chicken from the skillet and add chopped onions and garlic. Sauté until they turn translucent. Stir in the fresh spinach until just wilted, about 2 minutes.
  4. In a bowl, combine softened cream cheese, heavy cream, shredded cheese, and herbs. Blend with a whisk until smooth.
  5. Place the sautéed veggies in a baking dish and lay the seared chicken on top. Pour the cream mixture over the entire dish.
  6. Cover the dish with foil and bake for about 25-30 minutes. Then remove the foil and bake for an additional 10-15 minutes until bubbly and golden.
  7. Let it cool for a few minutes before serving.

Notes

Feel free to substitute spinach with kale or Greek yogurt for cream cheese. Add red pepper flakes for a kick.
