  • Pinch of red pepper flakes
  • 1 tablespoon maple syrup (optional)
  • Fat for cooking (olive oil or bacon fat)

Instructions

  1. Gather your ingredients: Start with one pound of ground meat.
  2. Mix the spices: In a bowl, blend the sage, thyme, salt, black pepper, and red pepper flakes. Add maple syrup if you want a sweeter sausage.
  3. Combine in a larger bowl with the ground meat. Mix until well-blended, being careful not to overwork the meat.
  4. Shape the mixture into small sausage patties, about 2-3 inches in diameter.
  5. Refrigerate the formed sausage on a parchment-lined tray for at least 30 minutes.
