- Pinch of red pepper flakes
- 1 tablespoon maple syrup (optional)

Instructions
- Gather your ingredients: Start with one pound of ground meat.
- Mix the spices: In a bowl, blend the sage, thyme, salt, black pepper, and red pepper flakes. Add maple syrup if you want a sweeter sausage.
- Combine in a larger bowl with the ground meat. Mix until well-blended, being careful not to overwork the meat.
- Shape the mixture into small sausage patties, about 2-3 inches in diameter.
- Refrigerate the formed sausage on a parchment-lined tray for at least 30 minutes.
