- 2 cups cottage cheese
- 2 cups mixed vegetables (bell peppers, zucchini, tomatoes, mushrooms)
- 2 eggs
- 2 cloves garlic, minced
- 1/4 cup fresh herbs (basil, parsley, thyme)
- 1 cup mozzarella or cheddar cheese, shredded
- Olive oil or butter for greasing
- Salt and black pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and grease a baking dish with olive oil or butter.
- Sauté the minced garlic in olive oil over medium heat until fragrant, then add the mixed vegetables and cook for 5-7 minutes.
- Combine the sautéed veggies, cottage cheese, beaten eggs, half of the cheese, salt, and pepper in a large mixing bowl.
- Pour the mixture into the prepared baking dish, top with remaining cheese, and bake for 30-35 minutes until golden and bubbly.
- Let cool for a few minutes before serving warm.
Notes
Feel free to customize vegetables or add cooked chicken for extra protein. Use a mix of seasoned vegetables to add more flavor.
