- 3 ripe bananas, mashed
- 1 cup rolled oats
- 1 cup all-purpose flour (or half whole wheat)
- 1/2 cup brown sugar
- 1/2 cup milk (dairy or plant-based)
- 1/4 cup melted butter
- 2 eggs
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 tsp vanilla extract
- Optional: chopped nuts, dark chocolate chips, or berries
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease them lightly.
- Mash the ripe bananas until fairly smooth, keeping some texture.
- Mix in the melted butter, eggs, and milk until fully combined. Add vanilla extract if using.
- Whisk together the oats, flour, sugar, baking powder, baking soda, and salt in another bowl.
- Gradually add the dry mixture to the wet mixture, stirring gently until just combined.
- Fold in any optional ingredients like nuts, chocolate chips, or berries.
- Spoon the batter evenly into the muffin tin, filling each cup about 2/3 full.
- Bake for 18-22 minutes or until a toothpick inserted comes out clean.
- Let them cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
Notes
Allow muffins to cool before enjoying. They freeze well and can be stored in an airtight container.
