Description

Ingredients

  • 3 ripe bananas, mashed
  • 1 cup rolled oats
  • 1 cup all-purpose flour (or half whole wheat)
  • 1/2 cup brown sugar
  • 1/2 cup milk (dairy or plant-based)
  • 1/4 cup melted butter
  • 2 eggs
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • Optional: chopped nuts, dark chocolate chips, or berries

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease them lightly.
  2. Mash the ripe bananas until fairly smooth, keeping some texture.
  3. Mix in the melted butter, eggs, and milk until fully combined. Add vanilla extract if using.
  4. Whisk together the oats, flour, sugar, baking powder, baking soda, and salt in another bowl.
  5. Gradually add the dry mixture to the wet mixture, stirring gently until just combined.
  6. Fold in any optional ingredients like nuts, chocolate chips, or berries.
  7. Spoon the batter evenly into the muffin tin, filling each cup about 2/3 full.
  8. Bake for 18-22 minutes or until a toothpick inserted comes out clean.
  9. Let them cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

Allow muffins to cool before enjoying. They freeze well and can be stored in an airtight container.
