Description

Delicious stuffed peppers filled with smoky bacon, creamy mac and cheese, and seasoned ground beef, creating a comfort food favorite for family meals.


Ingredients

  • 4 large bell peppers (red, yellow, or green)
  • 1 lb ground beef (80/20 blend)
  • 8 slices thick-cut bacon
  • 2 cups elbow macaroni, cooked
  • 1 cup cheddar cheese, shredded
  • 1/2 cup cream cheese
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tsp smoked paprika

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the bell peppers by washing and cutting the tops off, removing seeds and membranes.
  3. Cook the bacon in a large skillet until crispy, then remove and let cool.
  4. Sauté chopped onions and minced garlic in the bacon drippings until fragrant.
  5. Brown the ground beef in the skillet, seasoning with salt and pepper.
  6. Combine cooked macaroni, crumbled bacon, cream cheese, and shredded cheese into the beef mixture.
  7. Stuff each pepper with the filling mixture.
  8. Bake the stuffed peppers in a baking dish for 25 minutes, covered with aluminum foil, then bake uncovered for an additional 10 minutes.
  9. Garnish with fresh parsley and serve warm.

Notes

Feel free to swap ground beef with lentils for a vegetarian option. You can use poblano or anaheim peppers for added spice.
