- 4 large bell peppers (red, yellow, or green)
- 1 lb ground beef (80/20 blend)
- 8 slices thick-cut bacon
- 2 cups elbow macaroni, cooked
- 1 cup cheddar cheese, shredded
- 1/2 cup cream cheese
- 1 onion, chopped
- 3 cloves garlic, minced
- Salt and pepper to taste
- 1 tsp smoked paprika
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare the bell peppers by washing and cutting the tops off, removing seeds and membranes.
- Cook the bacon in a large skillet until crispy, then remove and let cool.
- Sauté chopped onions and minced garlic in the bacon drippings until fragrant.
- Brown the ground beef in the skillet, seasoning with salt and pepper.
- Combine cooked macaroni, crumbled bacon, cream cheese, and shredded cheese into the beef mixture.
- Stuff each pepper with the filling mixture.
- Bake the stuffed peppers in a baking dish for 25 minutes, covered with aluminum foil, then bake uncovered for an additional 10 minutes.
- Garnish with fresh parsley and serve warm.
Notes
Feel free to swap ground beef with lentils for a vegetarian option. You can use poblano or anaheim peppers for added spice.
