- 2 cups fresh or frozen cranberries
- 1 large onion, chopped

- 1 cup chicken broth
- 1/4 cup honey or brown sugar

- 1 teaspoon dried thyme or rosemary
- Salt and pepper to taste
Instructions
- Prep the chicken: Place the boneless chicken breast or thighs in the slow cooker.
- Sauté onions and garlic: Optionally sauté them in a skillet until golden brown, then add on top of the chicken.
- Add the cranberries: Scatter the cranberries evenly over the chicken.
- Mix the sauce: In a bowl, mix chicken broth, honey or brown sugar, and soy sauce; pour over chicken and cranberries.
- Add herbs: Sprinkle the herbs throughout the mixture.
- Cook low and slow: Cover and set on low for 6-8 hours or high for 4-6 hours.
- Shred and serve: After cooking, shred the chicken in the sauce and stir.
- Final touches: Taste and adjust seasoning with salt and pepper before serving.
