  • 1/2 cup granulated sugar
  • 1 can pineapple rings
  • Maraschino cherries (optional)
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 2 large eggs
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your baking sheet by lining it with parchment paper.
  3. Melt the butter in a saucepan over low heat, then mix in brown sugar until well combined and pour it into the baking sheet.
  4. Arrange pineapple rings over the mixture and place a maraschino cherry in the center of each ring.
  5. Cream together softened butter and granulated sugar until light and fluffy.
  6. Add in the eggs one at a time, mixing well, along with vanilla extract.
  7. Whisk together flour, baking powder, and baking soda in a separate bowl, then gradually add to the wet mixture.
  8. Spoon the dough over the pineapple layer and spread gently.
  9. Bake for about 20-25 minutes or until the edges are golden brown.
  10. Cool in the pan for 10 minutes before inverting onto a wire rack.

Notes

Chilling dough for 30 minutes can improve cookie shape. Make sure all ingredients are at room temperature for better texture.
