Instructions
- Preheat your oven to 350°F (175°C).
- Prepare your baking sheet by lining it with parchment paper.
- Melt the butter in a saucepan over low heat, then mix in brown sugar until well combined and pour it into the baking sheet.
- Arrange pineapple rings over the mixture and place a maraschino cherry in the center of each ring.
- Cream together softened butter and granulated sugar until light and fluffy.
- Add in the eggs one at a time, mixing well, along with vanilla extract.
- Whisk together flour, baking powder, and baking soda in a separate bowl, then gradually add to the wet mixture.
- Spoon the dough over the pineapple layer and spread gently.
- Bake for about 20-25 minutes or until the edges are golden brown.
- Cool in the pan for 10 minutes before inverting onto a wire rack.
Notes
Chilling dough for 30 minutes can improve cookie shape. Make sure all ingredients are at room temperature for better texture.
