Description

A heartwarming dish featuring succulent garlic herb chicken paired with creamy mashed potatoes and perfectly roasted carrots, perfect for family gatherings.

Ingredients

Scale
  • 4 boneless chicken thighs or breasts
  • 4 cloves fresh garlic, minced
  • 2 teaspoons fresh rosemary, chopped
  • 2 teaspoons fresh thyme, chopped
  • 2 tablespoons olive oil
  • 4 large russet or Yukon Gold potatoes, peeled and chopped
  • 1/2 cup butter
  • 1/2 cup cream
  • 4 large carrots, peeled and cut
  • Salt and pepper to taste

Instructions

  1. Prepare the Ingredients: Start by preheating your oven to 425°F (220°C). Chop your garlic and herbs and set them aside.
  2. Marinate the Chicken: In a bowl, mix olive oil, minced garlic, rosemary, thyme, salt, and pepper. Coat the chicken pieces thoroughly in this mixture. Allow to marinate for 15-30 minutes.
  3. Roast the Carrots: Toss prepared carrots with olive oil, salt, and pepper in a roasting pan. Spread them in a single layer. Roast for about 20 minutes.
  4. Start the Mash: Boil potatoes in salted water until tender, about 15-20 minutes. Drain and add butter and cream. Mash until creamy, seasoning with salt and pepper.
  5. Cook the Chicken: Sear marinated chicken in a hot skillet for 5-7 minutes on each side until golden. Transfer to the oven to cook through for an additional 10-15 minutes.
  6. Compose the Dish: Arrange creamy mash on each plate, add roasted carrots, and top with herb-infused chicken. Sprinkle fresh herbs for garnish.
  7. Enjoy: Gather your family around the table and relish the meal.
