Description

Ingredients

  • 2 egg yolks
  • 1 cup olive oil
  • Juice of 1/2 fresh lemon

Instructions

  1. Start by finely mincing the garlic.
  2. In a bowl, whisk together the egg yolks and minced garlic until combined.
  3. Slowly drizzle in the olive oil while whisking vigorously until the mixture emulsifies.
  4. Once you have reached your desired consistency, add the lemon juice and salt.
  5. Taste and adjust seasoning as needed.
  6. Transfer the aioli to a serving bowl and drizzle with additional olive oil for presentation.

Notes

For a lighter version, substitute some of the olive oil with Greek yogurt. For a vegan option, use aquafaba instead of egg yolks.
