Ingredients

- 2 egg yolks
- 1 cup olive oil
- Juice of 1/2 fresh lemon

Instructions
- Start by finely mincing the garlic.
- In a bowl, whisk together the egg yolks and minced garlic until combined.
- Slowly drizzle in the olive oil while whisking vigorously until the mixture emulsifies.
- Once you have reached your desired consistency, add the lemon juice and salt.
- Taste and adjust seasoning as needed.
- Transfer the aioli to a serving bowl and drizzle with additional olive oil for presentation.
Notes
For a lighter version, substitute some of the olive oil with Greek yogurt. For a vegan option, use aquafaba instead of egg yolks.
