- 2 cups Fresh Blueberries
- 2 tablespoons Lemon Juice
- 1 tablespoon Lemon Zest
- 1/4 cup Granulated Sugar
- 4 oz Cream Cheese
- 1 Egg (beaten)
- 1 teaspoon Vanilla Extract
- Pinch of Salt
Instructions
- Prepare the filling: In a medium bowl, combine fresh blueberries, sugar, lemon juice, lemon zest, and a pinch of salt. Gently fold in the softened cream cheese until just combined.
- Roll out the puff pastry: Lightly flour your work surface and roll out the thawed puff pastry into a rectangle.
- Cut the pastry into squares, about 4×4 inches.
- Assemble the Danishes: Place a generous spoonful of the blueberry-lemon filling in the center of each pastry square. Fold the corners toward the center and pinch to seal.
- Brush with egg wash: Beat one egg and brush it over the top of the pastries for that gorgeous golden color.
- Bake: Preheat your oven to 375°F (190°C) and bake the Danishes for about 20-25 minutes, or until golden brown and puffed.
- Cool and serve: Allow them to cool for a few minutes before enjoying.
