- 1 egg

Instructions
- Prep the sweet potatoes by peeling and grating them. Squeeze out excess moisture using a clean dish towel.
- Combine the grated sweet potatoes, minced onion, minced garlic, and egg in a mixing bowl. Stir in flour, salt, and pepper until well incorporated.
- Heat oil in a large skillet over medium heat until hot.
- Shape the mixture into patties and place them in the skillet, pressing down slightly.
- Cook for 5–6 minutes on one side, until golden brown, then flip and cook for an additional 4–5 minutes.
- Drain excess oil by placing cooked hash browns on a plate lined with paper towels.
- Serve hot with your favorite toppings.
