Instructions

  1. Prep the sweet potatoes by peeling and grating them. Squeeze out excess moisture using a clean dish towel.
  2. Combine the grated sweet potatoes, minced onion, minced garlic, and egg in a mixing bowl. Stir in flour, salt, and pepper until well incorporated.
  3. Heat oil in a large skillet over medium heat until hot.
  4. Shape the mixture into patties and place them in the skillet, pressing down slightly.
  5. Cook for 5–6 minutes on one side, until golden brown, then flip and cook for an additional 4–5 minutes.
  6. Drain excess oil by placing cooked hash browns on a plate lined with paper towels.
