- 2 cups fresh blueberries
- 2–3 tablespoons honey or maple syrup
- 1/2 cup chopped nuts (almonds, walnuts, or pecans)
- 1 teaspoon vanilla extract
- Parchment paper
Instructions
- Prepare the Base: In a mixing bowl, combine 2 cups of cottage cheese with 2 cups of fresh blueberries. Stir well until the berries are distributed evenly.
- Add Sweetness: Drizzle in 2-3 tablespoons of honey or maple syrup and a splash of vanilla extract. Taste the mixture, and adjust the sweetness if needed.
- Incorporate Crunch: Fold in 1/2 cup of your chosen nuts, adding that satisfying texture. This is also the moment to add any additional flavors like cinnamon or your favorite seeds.
- Spread it Out: Line a baking tray or a shallow dish with parchment paper. Pour the mixture into the lined tray and spread it out evenly, smoothing the top with a spatula.
- Freeze: Place the tray in the freezer for at least 240 minutes or until completely solid.
- Slice and Serve: Once frozen, lift the bark out of the tray using the parchment paper. Slice it into pieces of your preferred size, and enjoy!
