- 1 teaspoon mustard seeds
- 8–10 fresh curry leaves
- 1 onion (chopped)
- 1/2 cup vegetables (peas, carrots, bell peppers)
- 2 green chilies (chopped)
- 1/2 teaspoon turmeric
- Salt to taste
- 1 tablespoon lemon juice
- 2 cups water
Instructions
- Heat the oil in a non-stick skillet over medium heat. Add the mustard seeds and let them crackle.
- Add the curry leaves, allowing the aroma to fill your kitchen.
- Saute the chopped onions until they turn golden and translucent.
- Stir in the vegetables and season with salt and turmeric.
- Gently add the vermicelli and stir to combine.
- Pour in water in a 1:1 ratio, covering the mixture.
- Reduce the heat and simmer until the vermicelli absorbs the water.
- Finish with a splash of lemon juice, stir well, and serve.
Notes
Keep a close watch while cooking to avoid overcooking the vermicelli, which can result in a mushy texture.
