Description

Ingredients

  • 1 cup vermicelli (thin, roasted)
  • 2 tablespoons oil (vegetable or coconut)
  • 1 teaspoon mustard seeds
  • 810 fresh curry leaves
  • 1 onion (chopped)
  • 1/2 cup vegetables (peas, carrots, bell peppers)
  • 2 green chilies (chopped)
  • 1/2 teaspoon turmeric
  • Salt to taste
  • 1 tablespoon lemon juice
  • 2 cups water

Instructions

  1. Heat the oil in a non-stick skillet over medium heat. Add the mustard seeds and let them crackle.
  2. Add the curry leaves, allowing the aroma to fill your kitchen.
  3. Saute the chopped onions until they turn golden and translucent.
  4. Stir in the vegetables and season with salt and turmeric.
  5. Gently add the vermicelli and stir to combine.
  6. Pour in water in a 1:1 ratio, covering the mixture.
  7. Reduce the heat and simmer until the vermicelli absorbs the water.
  8. Finish with a splash of lemon juice, stir well, and serve.

Notes

Keep a close watch while cooking to avoid overcooking the vermicelli, which can result in a mushy texture.
