Instructions
- Prepare the pancake batter by mixing pancake mix, maple syrup, and eggs in a bowl until just combined.
- Heat a skillet over medium-low heat, adding a small amount of butter.
- Pour dollops of batter (1-2 inches in diameter) into the skillet to form mini pancakes.
- Cook pancakes until bubbles form, then flip and cook until golden brown.
- Place a small piece of cooked bacon or sausage and a pinch of cheese on each pancake immediately after flipping.
