- 6 large eggs
- 1/2 cup aged cheddar or feta cheese, crumbled
- 1 cup fresh spinach, chopped
- 1/2 cup bell peppers, chopped
- 1/2 cup tomatoes, diced
- 1/4 cup fresh parsley or cilantro, chopped
- 1/2 cup turkey sausage or tofu, cooked
- 1 teaspoon paprika
- 1 large tortilla
- Salt and pepper, to taste
Instructions
- Prepare ingredients by chopping your vegetables and cooking your protein of choice (if using turkey sausage, make sure it’s browned thoroughly).
- Cook the eggs by whisking together six eggs (or egg whites) with a pinch of salt and pepper. Pour them into the hot skillet and scramble until fluffy. For extra flavor, sprinkle a little paprika while cooking.
- Mix in vegetables by gently folding in the chopped vegetables and your cooked protein. Continue cooking until everything is heated through.
- Assemble the burrito by laying a tortilla flat and scooping a generous serving of the egg mixture onto the center. Sprinkle cheese and fresh herbs on top, then roll it up tightly, tucking the sides as you go.
- Serve with a smile by slicing the burrito in half and adding some hot sauce or avocado on the side for added flavor!
