  • 8 ounces cream cheese
  • 1 cup sour cream
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro, chopped
  • Lime juice
  • Shredded Monterey Jack or cheddar cheese (for garnish)

Instructions

  1. Sauté the aromatics: Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until softened, about 3-5 minutes.
  2. Cook the chicken: Add diced chicken, season with salt, pepper, and cumin. Cook until no longer pink, about 5-7 minutes.
  3. Incorporate the broth: Pour in chicken broth, white beans, and green chilies. Simmer for about 10 minutes.
  4. Add the creamy elements: Whisk in cream cheese and sour cream until smooth. Add more broth if too thick.
  5. Final touches: Stir in cilantro and lime juice, taste and adjust seasoning.

Notes

For a vegetarian version, substitute chicken with mushrooms or firm tofu and use vegetable broth. Customize by adding corn or bell peppers.
