- 1 can diced green chilies
- 8 ounces cream cheese
- 1 cup sour cream
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro, chopped
- Lime juice
- Shredded Monterey Jack or cheddar cheese (for garnish)
Instructions
- Sauté the aromatics: Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until softened, about 3-5 minutes.
- Cook the chicken: Add diced chicken, season with salt, pepper, and cumin. Cook until no longer pink, about 5-7 minutes.
- Incorporate the broth: Pour in chicken broth, white beans, and green chilies. Simmer for about 10 minutes.
- Add the creamy elements: Whisk in cream cheese and sour cream until smooth. Add more broth if too thick.
- Final touches: Stir in cilantro and lime juice, taste and adjust seasoning.
- Garnish and serve: Ladle into bowls and sprinkle with cheese and extra cilantro. Serve with cornbread or tortilla chips.
Notes
For a vegetarian version, substitute chicken with mushrooms or firm tofu and use vegetable broth. Customize by adding corn or bell peppers.
