Description

A comforting dish of tender shredded chicken wrapped in tortillas and baked with delicious sauce and cheese.


Ingredients

  • 2 cups cooked, shredded chicken
  • 8 corn or flour tortillas
  • 1 cup Monterey Jack cheese, shredded
  • 1 cup cheddar cheese, shredded
  • 2 cups enchilada sauce (red or green)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 jalapeño, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp oregano
  • Salt and pepper to taste

Instructions

  1. Prepare the chicken by slow-cooking with spices until tender or roasting it until cooked. Shred once cooled.
  2. Make the filling by sautéing onions and garlic until soft. Add shredded chicken, cheese, and a splash of sauce. Mix until combined.
  3. Assemble the enchiladas by preheating your oven to 350°F (175°C). Spread a thin layer of sauce on the bottom of a baking dish. Take each tortilla and add filling, then roll tightly and place seam side down in the dish.
  4. Add the remaining sauce over the enchiladas and sprinkle additional cheese on top.
  5. Bake for 20-25 minutes until cheese is melted and bubbly. Cool slightly before serving.

Notes

Warm tortillas before assembling to prevent tearing. Customize your fillings and toppings for added flavor.
