A delightful blend of spicy buffalo chicken and creamy cheese stuffed into vibrant bell peppers, perfect for family gatherings.


Ingredients

  • 4 large bell peppers (red, yellow, or green)
  • 2 cups cooked shredded chicken
  • 1/2 cup buffalo sauce
  • 4 oz cream cheese
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup diced celery
  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Optional: chopped herbs for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove the seeds.
  3. Heat olive oil in a skillet over medium heat and sauté diced onions and minced garlic until fragrant.
  4. Mix together cooked chicken, cream cheese, buffalo sauce, sautéed vegetables, and half the shredded cheese in a large bowl.
  5. Fill each pepper with the buffalo chicken mixture and top with remaining cheese.
  6. Bake covered with foil for 25-30 minutes, then uncover and bake for an additional 10 minutes until the cheese is bubbly.
  7. Serve with extra buffalo sauce or ranch dressing if desired.
