- 4 large bell peppers (red, yellow, or green)
- 2 cups cooked shredded chicken
- 1/2 cup buffalo sauce
- 4 oz cream cheese
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1/2 cup diced celery
- 1/2 cup diced onions
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
- Optional: chopped herbs for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the tops off the bell peppers and remove the seeds.
- Heat olive oil in a skillet over medium heat and sauté diced onions and minced garlic until fragrant.
- Mix together cooked chicken, cream cheese, buffalo sauce, sautéed vegetables, and half the shredded cheese in a large bowl.
- Fill each pepper with the buffalo chicken mixture and top with remaining cheese.
- Bake covered with foil for 25-30 minutes, then uncover and bake for an additional 10 minutes until the cheese is bubbly.
- Serve with extra buffalo sauce or ranch dressing if desired.
