- 2 cups old-fashioned oats
- 1 cup pumpkin puree
- 2 cups milk (dairy, almond, or oat)
- 2 eggs
- ½ cup brown sugar
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon ginger
- Optional: ½ cup chopped nuts or dried fruit
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a baking dish with butter or cooking spray.
- Combine the oats, pumpkin puree, milk, eggs, brown sugar, cinnamon, nutmeg, and ginger in a large bowl. Stir until well mixed.
- Fold in optional nuts or dried fruits for added texture.
- Pour the mixture into the prepared baking dish and spread it evenly.
- Bake for 30-35 minutes or until the top is set and slightly golden.
- Let cool for a few minutes before serving.
Notes
For extra flavor, sprinkle more cinnamon on top before baking, or add a swirl of peanut butter.
