Ingredients

  • 2 cups old-fashioned oats
  • 1 cup pumpkin puree
  • 2 cups milk (dairy, almond, or oat)
  • 2 eggs
  • ½ cup brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon ginger
  • Optional: ½ cup chopped nuts or dried fruit

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish with butter or cooking spray.
  2. Combine the oats, pumpkin puree, milk, eggs, brown sugar, cinnamon, nutmeg, and ginger in a large bowl. Stir until well mixed.
  3. Fold in optional nuts or dried fruits for added texture.
  4. Pour the mixture into the prepared baking dish and spread it evenly.
  5. Bake for 30-35 minutes or until the top is set and slightly golden.
  6. Let cool for a few minutes before serving.

Notes

For extra flavor, sprinkle more cinnamon on top before baking, or add a swirl of peanut butter.
