Description

Delicious low-carb meatballs made with ground beef and almond flour, infused with garlic and herbs.


Ingredients

  • 1 lb ground beef
  • 1/2 cup almond flour
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix in a large bowl ground beef, almond flour, eggs, minced garlic, chopped parsley, grated Parmesan, onion powder, salt, and pepper until just combined.
  3. Shape the mixture into 1-2 inch balls.
  4. Place them on a baking sheet lined with parchment paper.
  5. Bake for 18-20 minutes or until they reach an internal temperature of 160°F (70°C).
  6. Finish with a keto-friendly marinara sauce or serve with garlic butter sauce.
  7. Serve with zoodles or cauliflower rice, and enjoy!

Notes

For added flavor, consider browning the meatballs in a skillet before baking. Chill the shaped meatballs for 30 minutes for better texture.
