- 4 cups boneless chicken pieces (breast or thighs)
- 6 slices thick-cut bacon
- 2 tablespoons ranch seasoning
- 8 ounces cream cheese
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup mixed vegetables (fresh spinach, broccoli, or cauliflower)
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the bacon in a skillet over medium heat until crispy. Drain the excess fat, but keep a tablespoon for flavor.
- Sauté the chicken in the bacon fat until cooked through, about 6-8 minutes. Season with salt, pepper, and half of the ranch seasoning.
- In a large bowl, combine cream cheese, sour cream, and the remaining ranch seasoning. Mix until smooth.
- Add the cooked chicken, crumbled bacon, and any vegetables to the bowl. Stir to combine.
- Transfer the mixture to a greased casserole dish and top with shredded cheese.
- Bake for 25-30 minutes until bubbly and the cheese is melted and slightly golden.
- Let sit for about 5 minutes before serving.
