- 5 pounds beef short ribs
- 2 tablespoons olive oil
- 2 onions, chopped
- 4 garlic cloves, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 sprigs fresh thyme
- 2 sprigs fresh rosemary
- 1 bottle (750ml) robust red wine
- 4 cups beef broth
- 2 cups canned or fresh tomatoes
- 2 bay leaves
- 1 teaspoon black peppercorns
Instructions
- Season your short ribs generously with salt and pepper.
- Heat olive oil in a heavy pot or Dutch oven over medium-high heat and sear the short ribs until browned on all sides.
- Remove the ribs and add chopped onions, carrots, celery, and minced garlic in the same pot. Sauté until softened.
- Pour in red wine and scrape up the browned bits from the bottom.
- Add beef broth, tomatoes, and herbs. Return short ribs to the pot, ensuring they’re mostly submerged.
- Cover and transfer to a preheated oven at 300°F (150°C) for about 3 hours, or until fork-tender.
- Remove ribs and strain the sauce if desired. Reduce sauce on stove for a thicker consistency.
- Serve over mashed potatoes or grains, garnished with freshly chopped herbs.

Be sure to let the ribs rest after cooking to redistribute juices, ensuring moisture.
