Ingredients

  • 5 pounds beef short ribs
  • 2 tablespoons olive oil
  • 2 onions, chopped
  • 4 garlic cloves, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 1 bottle (750ml) robust red wine
  • 4 cups beef broth
  • 2 cups canned or fresh tomatoes
  • 2 bay leaves
  • 1 teaspoon black peppercorns

Instructions

  1. Season your short ribs generously with salt and pepper.
  2. Heat olive oil in a heavy pot or Dutch oven over medium-high heat and sear the short ribs until browned on all sides.
  3. Remove the ribs and add chopped onions, carrots, celery, and minced garlic in the same pot. Sauté until softened.
  4. Pour in red wine and scrape up the browned bits from the bottom.
  5. Add beef broth, tomatoes, and herbs. Return short ribs to the pot, ensuring they’re mostly submerged.
  6. Cover and transfer to a preheated oven at 300°F (150°C) for about 3 hours, or until fork-tender.
  7. Remove ribs and strain the sauce if desired. Reduce sauce on stove for a thicker consistency.
  8. Serve over mashed potatoes or grains, garnished with freshly chopped herbs.

Be sure to let the ribs rest after cooking to redistribute juices, ensuring moisture.
