Instructions

  1. Whisk together the flour, sugar, and baking powder in a large mixing bowl.
  2. Beat together the eggs, milk, and vanilla extract in a separate bowl.
  3. Pour the wet ingredients into the dry mixture, stirring gently until a soft, sticky dough forms.
  4. Knead the dough briefly on a floured surface, wrap it in plastic, and let it rest for 30 minutes.
  5. Heat the oil in a deep skillet to 350°F (175°C).
  6. Roll out the dough to about ¼-inch thickness and cut into squares.
  7. Drop beignets into the hot oil, frying for 2-3 minutes on each side until golden brown.
  8. Remove from oil and drain on a paper towel; sprinkle with powdered sugar while warm.

For a dairy-free option, substitute almond or oat milk. Lightly dust the work surface to prevent sticking, but avoid using too much flour.
