- 1 lb breakfast sausage (pork or turkey)
- 1 bag (30 oz) frozen hashbrowns
- 8 oz cream cheese, softened
- 6 large eggs
- 1 cup shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 small onion, diced
- 2 cloves garlic, minced
- Fresh chives or parsley, for garnish
- Salt and pepper, to taste
- Optional: paprika or red pepper flakes, for seasoning
Instructions
- Preheat your oven to 350°F (175°C).
- Sauté the sausage in a skillet over medium heat until cooked through, about 5-7 minutes. Add onions and garlic in the last few minutes.
- Whisk together the eggs, cream cheese, salt, and pepper until smooth.
- Layer the frozen hashbrowns in a greased 9×13 baking dish.
- Add the cooked sausage mixture on top of the hashbrowns and stir to combine.
- Combine the egg and cream cheese mixture over the layers, then top with shredded cheese.
- Bake covered with foil for 30 minutes, then uncover and bake for an additional 15-20 minutes until golden brown.
- Let the casserole cool for a few minutes before slicing.
Notes
For a lighter version, opt for reduced-fat cream cheese and turkey sausage. This dish can also be prepared in advance and frozen for convenience.
