A comforting and indulgent casserole combining savory sausage, creamy eggs, and crispy hashbrowns, perfect for family gatherings or cozy brunches.


Ingredients

  • 1 lb breakfast sausage (pork or turkey)
  • 1 bag (30 oz) frozen hashbrowns
  • 8 oz cream cheese, softened
  • 6 large eggs
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • Fresh chives or parsley, for garnish
  • Salt and pepper, to taste
  • Optional: paprika or red pepper flakes, for seasoning

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sauté the sausage in a skillet over medium heat until cooked through, about 5-7 minutes. Add onions and garlic in the last few minutes.
  3. Whisk together the eggs, cream cheese, salt, and pepper until smooth.
  4. Layer the frozen hashbrowns in a greased 9×13 baking dish.
  5. Add the cooked sausage mixture on top of the hashbrowns and stir to combine.
  6. Combine the egg and cream cheese mixture over the layers, then top with shredded cheese.
  7. Bake covered with foil for 30 minutes, then uncover and bake for an additional 15-20 minutes until golden brown.
  8. Let the casserole cool for a few minutes before slicing.

Notes

For a lighter version, opt for reduced-fat cream cheese and turkey sausage. This dish can also be prepared in advance and frozen for convenience.
