- 4 boneless chicken breasts or thighs
- 4 medium Yukon Gold potatoes, chopped
- 2 cups fresh broccoli florets
- 4 cloves garlic, minced
- 1 large lemon, zested and juiced
- 3 tablespoons olive oil
- Fresh herbs (rosemary or thyme, optional)
- Salt and pepper to taste
Instructions
- Prepare the chicken by marinating it in lemon juice, garlic, salt, and pepper for at least 20 minutes.
- Preheat your oven to 400°F (200°C).
- Chop the potatoes into even-sized pieces and cut the broccoli into florets.
- In a bowl, toss the potatoes with olive oil, salt, pepper, and optional herbs, then spread on a baking sheet.
- Roast the potatoes for about 20 minutes or until golden.
- Add the marinated chicken to the baking sheet with the potatoes.
- Toss in the broccoli, drizzle with lemon juice, and return to the oven for another 15-20 minutes.
- Remove from the oven and let rest for a few minutes before serving.
