Description

Ingredients

  • 4 boneless chicken breasts or thighs
  • 4 medium Yukon Gold potatoes, chopped
  • 2 cups fresh broccoli florets
  • 4 cloves garlic, minced
  • 1 large lemon, zested and juiced
  • 3 tablespoons olive oil
  • Fresh herbs (rosemary or thyme, optional)
  • Salt and pepper to taste

Instructions

  1. Prepare the chicken by marinating it in lemon juice, garlic, salt, and pepper for at least 20 minutes.
  2. Preheat your oven to 400°F (200°C).
  3. Chop the potatoes into even-sized pieces and cut the broccoli into florets.
  4. In a bowl, toss the potatoes with olive oil, salt, pepper, and optional herbs, then spread on a baking sheet.
  5. Roast the potatoes for about 20 minutes or until golden.
  6. Add the marinated chicken to the baking sheet with the potatoes.
  7. Toss in the broccoli, drizzle with lemon juice, and return to the oven for another 15-20 minutes.
  8. Remove from the oven and let rest for a few minutes before serving.
