Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 3 medium sweet potatoes, diced
  • 1 cup grated sharp cheddar cheese
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 bell peppers, diced
  • 2 cups low-sodium chicken or vegetable broth
  • 2 cups spinach or kale, chopped
  • Olive oil for sautéing
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the chicken by seasoning with salt, pepper, and herbs.
  3. Sauté the aromatics: Heat olive oil and cook onion and bell peppers until softened, then add garlic.
  4. Cook the chicken in the skillet until browned (5-7 minutes), then shred or chop.
  5. Layer diced sweet potatoes in a large casserole dish, followed by sautéed vegetables and shredded chicken.
  6. Pour the broth over the mixture.
  7. Add a layer of spinach or other greens, gently pressing them in.
  8. Sprinkle cheddar cheese on top.
  9. Bake for 30-35 minutes until sweet potatoes are tender and top is golden brown.
  10. Serve hot with a side salad.
