Description

Deliciously fudgy brownies made with zucchini, offering a healthy twist on a classic treat.


Ingredients

  • 2 medium-sized zucchinis, grated and packed
  • 1 cup unsweetened cocoa powder
  • 1 cup all-purpose flour (or gluten-free alternative)
  • 1 cup granulated sugar (or brown sugar)
  • 2 large eggs (or flax eggs for vegan)
  • 1/2 cup melted butter (or coconut oil)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the zucchini by grating it and packing it tightly, squeezing out excess moisture if desired.
  3. Mix dry ingredients: In a large bowl, combine flour, cocoa powder, baking powder, baking soda, and salt.
  4. Combine wet ingredients: In another bowl, whisk together melted butter, sugar, eggs, and vanilla until light and fluffy.
  5. Combine both mixtures gradually, folding gently to avoid overmixing.
  6. Add the grated zucchini and fold until evenly distributed.
  7. Pour the batter into a greased 9×13 inch baking pan.
  8. Bake for 25-30 minutes, or until a toothpick inserted comes out with just a few moist crumbs.
  9. Cool in the pan before cutting into squares.
  10. Enjoy warm or at room temperature, possibly with a dollop of whipped cream.

Notes

For a lighter version, swap half the butter for applesauce. Feel free to add chopped nuts for added texture.
