- 2 medium-sized zucchinis, grated and packed
- 1 cup unsweetened cocoa powder
- 1 cup all-purpose flour (or gluten-free alternative)
- 1 cup granulated sugar (or brown sugar)
- 2 large eggs (or flax eggs for vegan)
- 1/2 cup melted butter (or coconut oil)
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the zucchini by grating it and packing it tightly, squeezing out excess moisture if desired.
- Mix dry ingredients: In a large bowl, combine flour, cocoa powder, baking powder, baking soda, and salt.
- Combine wet ingredients: In another bowl, whisk together melted butter, sugar, eggs, and vanilla until light and fluffy.
- Combine both mixtures gradually, folding gently to avoid overmixing.
- Add the grated zucchini and fold until evenly distributed.
- Pour the batter into a greased 9×13 inch baking pan.
- Bake for 25-30 minutes, or until a toothpick inserted comes out with just a few moist crumbs.
- Cool in the pan before cutting into squares.
- Enjoy warm or at room temperature, possibly with a dollop of whipped cream.
Notes
For a lighter version, swap half the butter for applesauce. Feel free to add chopped nuts for added texture.
