Ingredients

  • 1 tsp baking powder
  • 1/2 cup plant-based butter
  • 1 tsp vanilla extract
  • 1/4 cup non-dairy milk
  • 1 pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the plant-based butter and sugar until fluffy.
  3. Stir in the non-dairy milk and vanilla extract until smooth.
  4. Mix the flour, baking powder, and salt in another bowl.
  5. Add the dry mixture to the wet ingredients, stirring until fully incorporated.
  6. Form the dough into small balls and arrange them on a parchment-lined baking sheet.
  7. Flatten each ball gently with the back of a fork or your palm.
  8. Bake for 8-10 minutes until the edges turn golden.
  9. Cool on the tray for a few minutes before transferring to a wire rack.

Notes

Opt for whole wheat flour or coconut sugar as substitutions. Store cookies in an airtight container for up to a week.
