Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the plant-based butter and sugar until fluffy.
- Stir in the non-dairy milk and vanilla extract until smooth.
- Mix the flour, baking powder, and salt in another bowl.
- Add the dry mixture to the wet ingredients, stirring until fully incorporated.
- Form the dough into small balls and arrange them on a parchment-lined baking sheet.
- Flatten each ball gently with the back of a fork or your palm.
- Bake for 8-10 minutes until the edges turn golden.
- Cool on the tray for a few minutes before transferring to a wire rack.
Notes
Opt for whole wheat flour or coconut sugar as substitutions. Store cookies in an airtight container for up to a week.
