- 1 tablespoon unflavored gelatin
- 2 tablespoons cold water
- 1 vanilla bean or 2 teaspoons vanilla extract
Instructions
- Prepare gelatin: Sprinkle 1 tablespoon of gelatin over 2 tablespoons of cold water and let sit for 5-10 minutes.
- Combine cream, milk, and sugar in a saucepan; stir over medium heat until sugar dissolves but do not boil.
- Add the vanilla seeds and pod (or extract) to the warm mixture.
- Incorporate the bloomed gelatin, whisking until fully dissolved.
- Set the mixture into individual cups or molds; cover and refrigerate for at least 4 hours or overnight.
- Unmold by dipping cups in warm water, then inverting onto plates; garnish with fresh berries.
Notes
Let gelatin bloom properly for best results. Patience is key to achieve a creamy texture.
