Description

Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • ¾ cup granulated sugar
  • 1 tablespoon unflavored gelatin
  • 2 tablespoons cold water
  • 1 vanilla bean or 2 teaspoons vanilla extract

Instructions

  1. Prepare gelatin: Sprinkle 1 tablespoon of gelatin over 2 tablespoons of cold water and let sit for 5-10 minutes.
  2. Combine cream, milk, and sugar in a saucepan; stir over medium heat until sugar dissolves but do not boil.
  3. Add the vanilla seeds and pod (or extract) to the warm mixture.
  4. Incorporate the bloomed gelatin, whisking until fully dissolved.
  5. Set the mixture into individual cups or molds; cover and refrigerate for at least 4 hours or overnight.
  6. Unmold by dipping cups in warm water, then inverting onto plates; garnish with fresh berries.

Notes

Let gelatin bloom properly for best results. Patience is key to achieve a creamy texture.
