- 1/2 cup unsalted butter, melted
- 2 cups coconut flakes
- 8 oz dark chocolate (at least 60% cocoa)
- 1 can (14 oz) sweetened condensed milk
- 2 large eggs
- 1 tsp vanilla extract
Instructions
- Prepare the Crust: Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs with melted butter until it resembles wet sand. Firmly press into a tart pan and bake for 8-10 minutes until golden. Set aside to cool.
- Toast the Coconut: In a skillet over medium heat, add coconut flakes, stirring until golden brown. Remove from heat and set aside.
- Make the Filling: In a medium saucepan, gently heat dark chocolate and sweetened condensed milk over low heat until smooth. Remove from heat, whisk in eggs and vanilla until combined.
- Assemble the Tart: Spread half of the toasted coconut on the cooled crust, pour chocolate mixture over it. Top with remaining coconut.
- Bake: Return tart to oven and bake for 20-25 minutes until the filling is set around edges but slightly jiggly in center. Cool to room temperature and refrigerate for at least 2 hours.
- Serve: Slice and enjoy chilled or at room temperature, optionally with whipped cream or fresh fruit.
