  2. Mix the mascarpone and sugar: In a mixing bowl, combine mascarpone with sugar and beat until smooth.
  3. Incorporate the eggs: Separate eggs, whip egg whites until soft peaks form, then blend yolks into the mascarpone mixture.
  4. Fold in the egg whites: Gently fold whipped egg whites into the mascarpone mixture.
  5. Soak the ladyfingers: Dip each ladyfinger into the cooled espresso briefly.
  6. Layer the ingredients: In a dish, alternate layers of soaked ladyfingers and mascarpone mixture.
  7. Chill: Cover and refrigerate for at least 4 hours or overnight.
  8. Dust with cocoa: Just before serving, dust the top with cocoa powder.
  9. Garnish (optional): Add chocolate shavings or cinnamon if desired.
