Description

A delightful Strawberry Crunch Cake layered with fresh strawberries, whipped cream, and a crunchy graham cracker topping, perfect for any celebration.


Ingredients

  • 1 1/2 cups granulated sugar
  • 2 1/2 tsp baking powder
  • 4 large eggs
  • 1/2 cup unsalted butter, melted
  • 1 cup milk (or almond/oat milk)
  • 1 tbsp vanilla extract
  • 4 cups fresh strawberries, diced
  • 1/2 cup granulated sugar (for strawberries)
  • 1 tbsp lemon juice
  • 1 1/2 cups crushed graham crackers
  • 1/2 cup brown sugar
  • 1/2 cup melted butter (for crunch topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. Whisk together the flour, sugar, and baking powder in a large bowl.
  3. Mix the eggs, melted butter, milk, and vanilla extract in another bowl until combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Divide the batter evenly between the prepared pans.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  8. Wash and dice the strawberries; mix with granulated sugar and lemon juice in a bowl.
  9. Combine the crushed graham crackers, brown sugar, and melted butter in another bowl for the crunch topping.
  10. Layer one cake on a serving plate, spread whipped cream, half of the strawberries, and crunch topping. Repeat with the second cake.
  11. Top with whipped cream and remaining crunch topping, and garnish with whole strawberries if desired.

Notes

Ensure cakes are completely cooled before frosting to prevent melting. Whip cream to soft peaks and chill before decorating.
