Description

Deliciously sweet-tart Raspberry Crumble Bars with a buttery crumb topping that evokes nostalgia and warmth.


Ingredients

  • 2 cups fresh raspberries
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking dish or line it with parchment paper.
  2. Combine the flour, oats, and sugar in a large mixing bowl. Cut in the butter until it resembles coarse crumbs. Reserve about a cup for topping.
  3. Press the rest into the bottom of the prepared dish to form a crust.
  4. Toss the raspberries with sugar and lemon juice, then spread them over the crust.
  5. Crumble the reserved mixture over the raspberries completely.
  6. Bake for 30-35 minutes until the topping is golden brown and raspberries are bubbly.
  7. Cool completely in the pan before slicing.

Notes

For extra flavor, add a sprinkle of cinnamon to the crumble or lemon zest to the raspberry layer. Serve warm with ice cream or whipped cream.
