- 2 cups fresh raspberries
- 1 cup all-purpose flour
- 1 cup rolled oats
- 3/4 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 egg
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking dish or line it with parchment paper.
- Combine the flour, oats, and sugar in a large mixing bowl. Cut in the butter until it resembles coarse crumbs. Reserve about a cup for topping.
- Press the rest into the bottom of the prepared dish to form a crust.
- Toss the raspberries with sugar and lemon juice, then spread them over the crust.
- Crumble the reserved mixture over the raspberries completely.
- Bake for 30-35 minutes until the topping is golden brown and raspberries are bubbly.
- Cool completely in the pan before slicing.
Notes
For extra flavor, add a sprinkle of cinnamon to the crumble or lemon zest to the raspberry layer. Serve warm with ice cream or whipped cream.
