- ½ cup buttermilk or substitute
- 1 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, combine the flour, baking powder, and salt.
- Beat together the butter and sugar until fluffy and light.
- Integrate the eggs one at a time, mixing well after each addition.
- Gradually add the flour mixture, alternating with buttermilk.
- Finely chop the pistachios and fold them into the batter.
- Pour the batter into floured and greased cake pans.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Whip the heavy cream until soft peaks form.
- Fold in the powdered sugar and finely ground pistachios.
- Layer the cakes with frosting in between and cover the top and sides.
- Chill the frosted cake in the refrigerator for at least an hour before serving.
