  • ½ cup unsalted butter, softened
  • 3 large eggs
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup buttermilk or substitute
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine the flour, baking powder, and salt.
  3. Beat together the butter and sugar until fluffy and light.
  4. Integrate the eggs one at a time, mixing well after each addition.
  5. Gradually add the flour mixture, alternating with buttermilk.
  6. Finely chop the pistachios and fold them into the batter.
  7. Pour the batter into floured and greased cake pans.
  8. Bake for 25-30 minutes or until a toothpick comes out clean.
  9. Whip the heavy cream until soft peaks form.
  10. Fold in the powdered sugar and finely ground pistachios.
  11. Layer the cakes with frosting in between and cover the top and sides.
  12. Chill the frosted cake in the refrigerator for at least an hour before serving.
