A deliciously sweet and buttery Peach Upside-Down Cake with caramelized peaches that brings back memories of summer.

- 3 to 4 fresh peaches, sliced
- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 1 ½ cups all-purpose flour
- 1 tablespoon baking powder
- A pinch of salt
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
Instructions
- Preheat your oven to 350°F (175°C). In a 9-inch cast-iron skillet, melt the butter over medium heat.
- Stir in the granulated sugar until well combined.
- Arrange the sliced peaches over the sugar-butter mixture.
- Whisk together the flour, baking powder, and salt in a separate bowl.
- Cream the remaining sugar and butter in another bowl, then beat in the eggs one at a time, followed by vanilla extract.
- Combine the dry mixture with the butter-sugar mixture, alternating with the milk until just mixed.
- Pour the batter evenly over the peaches.
- Bake for 35-40 minutes, or until golden brown and a toothpick comes out clean.
- Cool the cake for 10 minutes before flipping it onto a platter.
- Serve warm with whipped cream or vanilla ice cream.
Notes
Use ripe peaches for best flavor. You can substitute with canned peaches or other fruits like pineapples or plums if fresh peaches are not available.
