Delightful individual cups of no-bake mango cheesecake, perfectly creamy and refreshing for any occasion.


Ingredients

  • 8 ounces cream cheese
  • 1 cup heavy whipping cream
  • ¾ cup granulated sugar (½ cup for filling and ¼ cup for crust)
  • 2 fresh ripe mangoes
  • 1 cup graham cracker crumbs
  • 4 tablespoons unsalted butter, melted
  • 1 tablespoon lime juice

Instructions

  1. Combine graham cracker crumbs, melted butter, and sugar in a bowl. Press into the bottom of each cup.
  2. Beat cream cheese until smooth, gradually adding sugar until mixed.
  3. Whip heavy cream until stiff peaks form, then gently fold into cream cheese mixture.
  4. Peel and chop mangoes, then blend until smooth, adding lime juice.
  5. Layer cheesecake filling over crust and top with mango puree, creating swirls if desired.
  6. Cover with plastic wrap and refrigerate for at least 240 minutes until set.
  7. Serve with mango slices or whipped cream on top.

Notes

Use chilled bowls for whipping cream for better results. Allow chilling time for the best texture.
