Description

Delightful bite-sized pastries filled with rich cream and topped with chocolate glaze, perfect for gatherings and sweet memories.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup butter
  • 1 cup water
  • A pinch of salt
  • 4 large eggs
  • 2 cups milk
  • 1/2 cup sugar
  • 1/4 cup cornstarch
  • 4 egg yolks
  • 1 tablespoon vanilla extract
  • 4 ounces dark or semi-sweet chocolate

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine 1 cup of water, 1/2 cup of butter, and a pinch of salt in a saucepan, bringing to a gentle boil.
  3. Add 1 cup of flour, stirring until the mixture pulls away from the sides of the pan.
  4. Remove from heat, let cool slightly, and add 4 eggs, mixing until smooth.
  5. Spoon the choux pastry into a piping bag and pipe small mounds onto a lined baking sheet.
  6. Bake for 20-25 minutes until puffed and golden brown.
  7. Heat 2 cups of milk until steaming.
  8. Whisk together 1/2 cup of sugar, 1/4 cup of cornstarch, and 4 egg yolks in a bowl.
  9. Pour the hot milk into the egg mixture, whisking constantly.
  10. Return to the saucepan and cook until thickened, then remove from heat and add 1 tablespoon of vanilla extract.
  11. Once the choux pastries are cool, fill them with the pastry cream.
  12. Dip the tops into melted chocolate glaze and let cool until set.

Notes

Allow eclairs to cool completely before filling to maintain their crisp texture.
