- 1 cup all-purpose flour
- 1/2 cup butter
- 1 cup water
- A pinch of salt
- 4 large eggs
- 2 cups milk
- 1/2 cup sugar
- 1/4 cup cornstarch
- 4 egg yolks
- 1 tablespoon vanilla extract
- 4 ounces dark or semi-sweet chocolate
Instructions
- Preheat your oven to 400°F (200°C).
- Combine 1 cup of water, 1/2 cup of butter, and a pinch of salt in a saucepan, bringing to a gentle boil.
- Add 1 cup of flour, stirring until the mixture pulls away from the sides of the pan.
- Remove from heat, let cool slightly, and add 4 eggs, mixing until smooth.
- Spoon the choux pastry into a piping bag and pipe small mounds onto a lined baking sheet.
- Bake for 20-25 minutes until puffed and golden brown.
- Heat 2 cups of milk until steaming.
- Whisk together 1/2 cup of sugar, 1/4 cup of cornstarch, and 4 egg yolks in a bowl.
- Pour the hot milk into the egg mixture, whisking constantly.
- Return to the saucepan and cook until thickened, then remove from heat and add 1 tablespoon of vanilla extract.
- Once the choux pastries are cool, fill them with the pastry cream.
- Dip the tops into melted chocolate glaze and let cool until set.
Notes
Allow eclairs to cool completely before filling to maintain their crisp texture.
