  • 1 cup powdered sugar (for glaze)
  • 23 tbsp fresh lemon juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a standard loaf pan by greasing it and lining with parchment paper.
  3. Mix the flour, baking powder, and salt in a medium bowl.
  4. Cream the butter and granulated sugar until light and fluffy.
  5. Add the eggs one at a time, mixing well after each addition; then stir in the lemon zest and juice.
  6. Combine the dry ingredients with the wet ingredients, alternating with the milk, until just combined.
  7. Pour the batter into the prepared loaf pan and smooth out the top.
  8. Bake for 50-60 minutes or until a toothpick comes out clean.
  9. Cool the cake for 10 minutes before transferring it to a wire rack.
  10. Make the glaze by whisking powdered sugar with lemon juice, then drizzle over the warm cake.

Notes

For a gluten-free option, substitute all-purpose flour with gluten-free flour blend. You can also use flax eggs or applesauce for a vegan version.
