Instructions
- Preheat your oven to 350°F (175°C).
- Prepare a standard loaf pan by greasing it and lining with parchment paper.
- Mix the flour, baking powder, and salt in a medium bowl.
- Cream the butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition; then stir in the lemon zest and juice.
- Combine the dry ingredients with the wet ingredients, alternating with the milk, until just combined.
- Pour the batter into the prepared loaf pan and smooth out the top.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Cool the cake for 10 minutes before transferring it to a wire rack.
- Make the glaze by whisking powdered sugar with lemon juice, then drizzle over the warm cake.
Notes
For a gluten-free option, substitute all-purpose flour with gluten-free flour blend. You can also use flax eggs or applesauce for a vegan version.
