Description

Delicious, low-carb lemon bars that are sweet, tangy, and perfect for any occasion.


Ingredients

Scale
  • 1 ½ cups almond flour
  • 1/3 cup erythritol
  • 1/2 cup butter, melted (or coconut oil for dairy-free)
  • 3 large eggs
  • 1/2 cup freshly squeezed lemon juice
  • 1 tsp baking powder
  • Powdered erythritol for dusting
  • Lemon zest (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine almond flour and erythritol in a mixing bowl.
  3. Stir in the melted butter until well mixed.
  4. Press the mixture into the bottom of a lined baking pan.
  5. Bake the crust for 10-12 minutes until golden brown.
  6. Whisk together eggs, lemon juice, and more erythritol in a separate bowl.
  7. Add baking powder and mix until fully incorporated.
  8. Pour the lemon mixture over the cooled crust.
  9. Bake again for 20-25 minutes until the filling is set.
  10. Cool completely before cutting into squares.
  11. Dust with powdered erythritol or lemon zest before serving.

Notes

Allow the bars to cool completely for clean cuts. They can be stored in the fridge for up to a week, or frozen for three months.
