- 1 ½ cups almond flour
- 1/3 cup erythritol
- 1/2 cup butter, melted (or coconut oil for dairy-free)
- 3 large eggs
- 1/2 cup freshly squeezed lemon juice
- 1 tsp baking powder
- Powdered erythritol for dusting
- Lemon zest (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine almond flour and erythritol in a mixing bowl.
- Stir in the melted butter until well mixed.
- Press the mixture into the bottom of a lined baking pan.
- Bake the crust for 10-12 minutes until golden brown.
- Whisk together eggs, lemon juice, and more erythritol in a separate bowl.
- Add baking powder and mix until fully incorporated.
- Pour the lemon mixture over the cooled crust.
- Bake again for 20-25 minutes until the filling is set.
- Cool completely before cutting into squares.
- Dust with powdered erythritol or lemon zest before serving.
Notes
Allow the bars to cool completely for clean cuts. They can be stored in the fridge for up to a week, or frozen for three months.
