Description
A vibrant and refreshing dessert combining mint chocolate chip ice cream with a chocolate crust, perfect for summer gatherings.
Ingredients
Scale
- 1 pre-made chocolate graham cracker crust
- 2 cups mint chocolate chip ice cream (softened)
- 1 cup heavy whipping cream
- 1 teaspoon peppermint extract
- Chocolate syrup for drizzling
- Mini chocolate chips or crushed mints for topping (optional)
Instructions
- Prepare your crust: Start with a pre-made chocolate graham cracker crust. If you prefer to make your own, crush chocolate graham crackers, combine them with melted butter, and press them into a pie dish. Bake at 350°F for about 10 minutes, then allow it to cool completely.
- Add the filling: In a mixing bowl, add your softened mint chocolate chip ice cream. Introduce a teaspoon of peppermint extract and fold gently until well combined.
- Fold in the cream: In another bowl, whip heavy whipping cream until soft peaks form. Gently fold this whipped cream into the ice cream mixture.
- Pour into the crust: Once combined, pour the filling into your cooled crust, smoothing it out with a spatula.
- Chill: Cover the pie with plastic wrap and place it in the freezer for at least 240 minutes, allowing the pie to firm up perfectly.
- Add toppings: Before serving, drizzle chocolate syrup over the top and sprinkle with mini chocolate chips or crushed mints, if desired.
- Serve and enjoy: Slice into this beauty and watch everyone’s faces light up with joy.
Notes
For a gluten-free version, consider using gluten-free cookie crumbs for the crust. You can also enhance the flavor with crushed Andes mints on top.
