- 1 cup panko breadcrumbs
- 1 cup marinara sauce
- 1 cup fresh mozzarella cheese, sliced
- 1/2 cup grated parmesan cheese
- 2 eggs
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- Fresh basil, for garnish
Instructions
- Prepare your chicken: Pound the chicken to an even thickness, about half an inch.
- Set up your dredging station: In one bowl, whisk eggs with a splash of water; in another, combine breadcrumbs, salt, pepper, and cheese.
- Dredge the chicken: Coat each piece in the egg mixture, then in breadcrumb mix.
- Pan-Fry the chicken: Heat olive oil in a skillet and fry each piece for 3-4 minutes on each side until golden and crispy.
- Add sauce and cheese: Transfer to a baking dish, top with marinara and mozzarella.
- Bake to perfection: Preheat oven to 400°F (200°C); bake for 15-20 minutes until cheese is bubbly.
- Garnish and serve: Let rest, then sprinkle with fresh basil before serving.
Notes
For vegetarians, substitute chicken with eggplant or zucchini.
