Ingredients

  • 2 boneless chicken breasts
  • 1 cup panko breadcrumbs
  • 1 cup marinara sauce
  • 1 cup fresh mozzarella cheese, sliced
  • 1/2 cup grated parmesan cheese
  • 2 eggs
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Fresh basil, for garnish

Instructions

  1. Prepare your chicken: Pound the chicken to an even thickness, about half an inch.
  2. Set up your dredging station: In one bowl, whisk eggs with a splash of water; in another, combine breadcrumbs, salt, pepper, and cheese.
  3. Dredge the chicken: Coat each piece in the egg mixture, then in breadcrumb mix.
  4. Pan-Fry the chicken: Heat olive oil in a skillet and fry each piece for 3-4 minutes on each side until golden and crispy.
  5. Add sauce and cheese: Transfer to a baking dish, top with marinara and mozzarella.
  6. Bake to perfection: Preheat oven to 400°F (200°C); bake for 15-20 minutes until cheese is bubbly.
  7. Garnish and serve: Let rest, then sprinkle with fresh basil before serving.

For vegetarians, substitute chicken with eggplant or zucchini.
