- 1 pound boneless chicken breast or thighs
- 1 cup heavy cream
- 2 cups fresh spinach
- 1/2 cup sun-dried tomatoes, chopped
- 3 cloves garlic, minced
- 8 ounces mushrooms (cremini or button), sliced
- 1 cup chicken broth
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Begin by seasoning the chicken with salt and pepper. Heat olive oil in a large skillet over medium-high heat.
- Add the chicken and sear on both sides until golden brown, about 6-7 minutes per side. Remove the chicken and let it rest.
- In the same skillet, add more oil if necessary, then add minced garlic and mushrooms. Sauté until tender, about 4-5 minutes.
- Pour in chicken broth and scrape up any bits stuck to the pan; reduce for a couple of minutes.
- Stir in heavy cream and bring to a gentle simmer to thicken.
- Add sun-dried tomatoes and spinach, stirring until spinach wilts.
- Return the chicken to the skillet and drizzle with the sauce. Let it soak up the flavors for another minute.
- Serve immediately, garnished with fresh basil.
Notes
For a vegetarian version, substitute chicken with portobello mushrooms and use coconut milk instead of heavy cream. Pair with crusty bread or garlic mashed potatoes.
