Ingredients

- 4 salmon fillets (skin-on)
- 2 cups fresh spinach (or frozen, thawed and drained)
- 1 cup heavy cream
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Fresh dill or parsley, for garnish
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat. Place salmon skin-side down and sear for 4-5 minutes.
- Flip the salmon and cook for another 3-4 minutes, until cooked through.
- Remove the salmon and cover with foil to keep warm.
- Add minced garlic to the skillet and sauté for about 30 seconds until fragrant.
- Toss in the fresh spinach and stir until wilted, about 2-3 minutes.
- Pour in the heavy cream, stir to combine and let simmer until thickened. Season with salt, pepper, and lemon juice.
- Return the salmon to the skillet, spoon the sauce over it and heat through for about a minute.
- Serve hot, garnished with fresh herbs.
Notes
For best results, start with room temperature salmon and avoid overcrowding the pan. Serve with garlic bread or over rice.
