Description

A delightful dish that combines tender salmon with a rich, creamy spinach sauce flavored with garlic and herbs.


Ingredients

  • 4 salmon fillets (skin-on)
  • 2 cups fresh spinach (or frozen, thawed and drained)
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Fresh dill or parsley, for garnish
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Place salmon skin-side down and sear for 4-5 minutes.
  2. Flip the salmon and cook for another 3-4 minutes, until cooked through.
  3. Remove the salmon and cover with foil to keep warm.
  4. Add minced garlic to the skillet and sauté for about 30 seconds until fragrant.
  5. Toss in the fresh spinach and stir until wilted, about 2-3 minutes.
  6. Pour in the heavy cream, stir to combine and let simmer until thickened. Season with salt, pepper, and lemon juice.
  7. Return the salmon to the skillet, spoon the sauce over it and heat through for about a minute.
  8. Serve hot, garnished with fresh herbs.

Notes

For best results, start with room temperature salmon and avoid overcrowding the pan. Serve with garlic bread or over rice.
