  4. Whisk together the eggs and granulated sugar in a separate bowl until thick and pale.

  6. Add the sifted flour and salt, folding until just combined.
  7. Fill the ramekins about three-quarters full with the batter.
  8. Bake for 12-14 minutes until the edges are firm and the centers are soft.
  9. Let the cakes rest for 1 minute after baking before inverting them onto plates.
  10. Serve dusted with powdered sugar or with whipped cream/ice cream.
