Ingredients

  • 1 cup shredded coconut (sweetened or unsweetened)
  • 1 cup chocolate chips (dark or semi-sweet)
  • 1 can (14 oz) sweetened condensed milk
  • 1/4 cup cocoa powder
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Melt the chocolate: In a microwave-safe bowl, add your chocolate chips. Heat in 30-second intervals, stirring in between until fully melted and smooth.
  2. Mix ingredients: Once the chocolate has cooled slightly, stir in the sweetened condensed milk, shredded coconut, cocoa powder, vanilla extract, and a pinch of salt. Mix until completely combined.
  3. Chill the mixture: Cover the bowl with plastic wrap and let it chill in the refrigerator for about 30 minutes.
  4. Shape the balls: Use a spoon or melon baller to scoop out portions and roll them into bite-sized balls. Place them on a baking sheet lined with parchment paper.
  5. Coat with coconut (optional): Roll the balls in additional shredded coconut if desired.
  6. Chill again: Refrigerate the balls for at least 1 hour before serving.

Notes
