- 1 cup granulated sugar
- 1 cup brown sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 2 ½ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 cup caramel, wrapped candies or homemade
- Sea salt for sprinkling
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs, one at a time, and mix well along with the vanilla extract.
- Whisk together the flour, baking soda, and baking powder in a separate bowl.
- Gradually add the dry mixture to the wet ingredients, mixing until just combined.
- Scoop about a tablespoon of dough, flatten it, and add a piece of caramel in the center.
- Wrap the dough around the caramel, ensuring it’s fully enclosed.
- Place the cookies on prepared baking sheets with space between them.
- Sprinkle a pinch of sea salt on top of each cookie before baking.
- Bake for about 10-12 minutes, until edges are golden brown and centers remain soft.
- Cool on baking sheets for a few minutes before transferring to a wire rack.
Notes
For an added twist, use a splash of maple syrup if you’re out of vanilla extract. These cookies can be frozen for extended freshness.
